Vegetarian Pasta Bake - This nutritiously, delicious recipe for vegetarian pasta is made with whole wheat pasta, tofu, and spinach. It also has a better for you base of oil, and not creamy dairy, which is also better for you. A quick and easy vegetarian pasta recipe that will soon be a fanily favorite!

Ingredients to make Vegetarian Pasta Bake
1 medium onion, chopped
1-2 cloves garlic, minced or pressed
1 tbsp. olive oil
3 cups tomato sauce or spaghetti sauce
2 tbsp. fresh parsley, chopped
1/2 tsp. dried oregano*
8 ounces whole wheat bowtie pasta, approximately 4 heaping cups dried pasta
12 ounces (1 package) soft or medium-firm tofu, drained and pressed
1 (10 ounce) package frozen chopped spinach, defrosted and well drained
1/4 tsp. ground nutmeg
1/8 tsp. black pepper
1/2 -1 cup grated mozzarella cheese
*oregano may be omitted if flavoured spaghetti sauce is used.
Directions to make Vegetarian Pasta Bake
1.Preheat oven to 350 degrees. In a medium saucepan, heat olive oil over medium-high. Add onion and garlic and sauté gently for 2-3 minutes. Add tomato sauce, oregano (if using) and parsley to the saucepan. Bring to the boil; cover, and simmer 15 minutes.
• Meanwhile, cook pasta according to package directions, until al dente. Omit salt. While pasta is cooking, mash tofu with fork or potato masher in a medium bowl. Add drained spinach, nutmeg, and pepper. Mix well. Drain cooked pasta and add to the tofu mixture, mixing well
In a 2-quart casserole dish, layer one-quarter of the sauce on the bottom. Spread one-third of the tofu mixture over top, carefully evening it out with a large spoon or spatula. Continue layering the spaghetti sauce with the tofu mixture, ending with sauce. Top with grated mozzarella.
Cover and bake 30 minutes

Ingredients to make Homemade Cannelloni
1 lb Ricotta cheese
1/2 c Parmesan cheese, grated
2/3 c Romano cheese, grated
1/2 lb Mozzarella cheese, shred
1/4 lb Crawfish tails, cut small pieces
1/4 lb Crabmeat
1 lg Link boudin, smoked, cut in small pieces
1 lb Link Italian sausage, cut in small pieces
28 Canneloni shells
4 Eggs
2 Jalapeno peppers, chopped
1 t Tabasco
**SAUCE
1/2 c Red wine
3 c Tomato sauce
2 sm Cans tomato paste
1/2 c Butter
4 tb Olive oil
1/4 c Onion, diced
1/4 c Shallots, slice thin
1 t Fresh ground white pepper
1/8 c Garlic, chopped
1/4 c Mushrooms, chopped
**TOPPING
1/4 c Parmesan cheese, grated
1/4 lb Mozzarella cheese, shred

Angel Hair Pasta with Lemon & Garlic - The very small, thin angel hair, is so fine and light, we did not add sauce. Instead we added fresh, chopped tomato and garlic, with a hint of fresh squeezed lemon juice, and tossed it all with olive oil. So light and delicious, this best garlic pasta yet very satisfying.

Ingredients to make Angel Hair Pasta with Lemon & Garlic
1 ts Olive oil
2 Garlic cloves, peel & mince
1/2 c Dry white wine
1/4 c Freshly squeezed lemon juice
1 c Chopped tomato (1 medium)
4 oz Spinach angel hair pasta
4 oz Semolina angel hair pasta
1/4 c Chopped fresh basil
2 tb Freshly grated Parmesan
Ground black pepper to taste
